Granola

We have been obsessed with granola around here recently. We eat it for breakfast and then continue coming back to the granola jar all day for snacks. I love that Blake enjoys snacking on it; it makes me feel like a good mom when he is eating wholesome, homemade food. 


My mom loved our neighbor Jill's granola recipe and it was always a special treat to smell it baking in the oven. Her recipe is the same one we continue to use today. It's too good not to share!


Jill's Granola
6 c rolled oats
1/2 c wheat germ
2 c ribbon coconut
1 c macadamia nuts
1 c pecans
1 c cashews
1 c pumpkin seeds
1/4 c sesame seeds
1/2 c sunflower seeds
1/2 c canola oil
2 tsp cinnamon (optional)
1 1/2 c honey (divided)
2 TBS vanilla
2 c dried fruit (raisins, dried cherries, dried cranberries, apricot pieces, etc.)

Mix oatmeal, nuts, seeds, and coconut together in large bowl. Pour oil, 1 c honey, and cinnamon over mixture and stir well. Spread on lightly oiled cookie sheet and bake at 275 for 45-55 min, until golden brown. Stir occasionally while baking.  Remove from oven and pour back into mixing bowl. Mix in dried fruit. Drizzle 1/2 c honey over mixture and stir in vanilla. Mix well and allow to cool. 

Serve with milk, yoghurt, or eat plain. Store in tightly sealed container. Lasts on a counter in a container for up to two weeks, if keeping it long refrigerate or freeze.
